I am going to prayer meeting tonight and will be fellowshipping with other Christians. I always look forward to this time with other Chrisitans and hearing the Word of God in the middle of the week. It is good to spend time with others in prayer. There are many things in my life right now that could drag me into depression, but thank the Lord He is faithful to encourage my heart when I spend time with Him. I hope you have an opportunity to spend time with Him today too.
I was going to post some updated pictures today, but didn’t have time this morning to get them into the camera to download too you. The poultry are taking more time now in the morning and so I was running a little behind and didn’t want to be late for work.
I thought I’d be able to go to DC this weekend, but that didn’t materialize, so we will be home and on Monday I’ll be weeding if it isn’t raining. You aren’t supposed to weed green beans if they are wet, so we have not been able to do much with them. We’ve had nonstop rain for the last month it seems. This is good for the growing green things, but not for getting things accomplished around here. My salt shakers are sticking and there’s mold growing in other places and our garden and surrounding land has become a slug and snail heaven, and I’m ready for some hot dry swimming weather.
We swim in the Baker River which is still chilly but it feels soooo good on a hot dry day after working in the garden. Under the bridge the water is deep and it’s fun to just float down river or try to swim against the current. I’m not very successful with the later, but it’s still fun to try.
We got a bunch of cauliflower yesterday so I’m looking up recipes to make with cauliflower. I had leftovers last night, and then steamed some and it was really good. Now I need to get some recipes together since I have about 20 heads to use up and I do not like this canned or frozen.
Looked on the internet for recipes and found quite a list of “Healthy Cauliflower Recipes”…
Balsamic & Parmesan Roasted Cauliflower,Basmati Rice & Curry Casserole,Cauliflower & Couscous Pilaf, Cauliflower & Red Lentil Curry, Cauliflower with Gruyere Sauce, Cauliflower with New Mornay Sauce, Creamy Cauliflower Puree, Creamy Chopped Cauliflower Salad, Curried Chicken with Sweet Potatoes & Cauliflower, Curried Potatoes with Cauliflower , Ginger, Split Pea & Vegetable Curry, Indian-Spiced Eggplant & Cauliflower Stew, Quick Thai Chicken & Vegetable Curry, Roasted Florets, Roasted Winter Vegetables with Cheesy Polenta, Sauté of Cauliflower & Mustard Greens with Peanuts, Skillet Cauliflower Gratin, Tangy Cauliflower Salad , Vegetable Satay
Out of a list of 19 recipes there are 3 possibilities that have simple enough ingredients that Mr. Doug would like them and be able to eat them…
Pics here
Cauliflower n gruyere (cheese) sauce
Roasted Florets
Skillet Cauliflower Gratin
I guess I might try the cheese sauce one, and then the skillet gratin. If that works then they will be added to the recipe book.
I also got some peppers. We like stuffed peppers and I can make some of those with carrot and onion stuffing.
We also go some lettuce, so we probably will have some hamburgers sometime this week… to now down to the planning…
Menu:
Wednesday. Busy evening because we have prayer meeting so would be a good day for hamburgers.
Thursday: Cauliflower with cheese and meatballs in the skillet.
Friday: Left over cauliflower and cheese gratin in the skillet
Saturday: Corn Roast… we’d like to have friends over if they have no other commitments.
Sunday: Dinner at church… going to bring hamburgers and homemade buns
Monday: Stuffed Peppers… I’m off so will have lots of time to cook… and weed and mow and pluck rocks etc., etc.
Bible Reading:
On my Bible Reading I have found that following the schedule (I put a link on for that last time), was too hurried. I don’t have large blocks of time… even when I’m reading a novel I don’t get to read a lot at once, so I’m going to break that down into smaller chunks. I am up to Gen 7 now, but am supposed to be to Gen. 11 today. I’ve been writing down some notes as I go. You know it is truly amazing that though I’ve read these passages umpteen times there is still new stuff I see every time I read them. God is truly good!
Addition (Diet and Exercise):
So I’m on the track so far… thank the Lord… the next issue to take up is my diet… I really need to get back on track there. I was doing well until winter came up. That’s when I seem to pack on the weight and eat more “comfort food” if there really is such a thing… can’t imagine how comforting putting on 5 lbs can be, but winter gets me “down”. Still, all-in-all I have not put back on all the weight I lost last summer.
I guess then I will officially add that to my “On Track” list and see how I do with that. Gotta develop those good habits. After all this new eating must become a way of life especially now that I’m getting older the weight doesn’t come off so easy and I am not so active in my work now, so my calorie count must come down. I also need to look for ways to exercise. I love to swim, but that’s a summer sport and though I’d love to purchase a membership at the pool, it will probably be too expensive over time. I will check that out though.

This is a little better because it gives you access to the exercise machines as well. There are classes too.
Includes: weight room, CV and circuit training equipment, group fitness classes, SPINNING, pool, whirlpool,
Sauna, racquetball, basketball, game room, locker room. Might be a better deal at 49.17/mo for 6 months.

We will have to discuss and pray about this since I’m not sure how many days I will actually be able to use this membership in a months time. Probably won’t need it in the summer, plus during the winter we have heating costs, which cut into the budget…
I guess I should take up snowshoeing in the winter months… that would keep me in shape!!! Although swimming sounds a whole lot warmer! :)
I am looking forward to adding this on and getting back on track in this area.
2 Peter 3:18:
But grow in grace, and in the knowledge of our Lord and Saviour Jesus Christ. To him be glory both now and for ever. Amen.
