Menu "Monday"...


Ok, I know it's not Monday, Martha Stuart would frown, but my menus probably would be better if I put them on here after I cooked them. We pick up vegetables for "compost" and many times there's good stuff in there... I pick through and take out all edibles and leave the rest for the stinky chickens. They love loose greens leafy things and that is what we mostly give them, but they also like fruits and other types of veggies. Things they won't eat can be placed into the compost bin along with grass clippings and leaves and other organic matter and that all will go into the garden next year, or the year after depending on how long it takes for decay.

Well, now, that was appetizing. Ok, my most sweet husband whom I love dearly has been on a special diet nearly his whole life. No sugar of ANY kind, no additives, no high starch foods, and some types of fruit.

Things we don't eat include preprocessed foods, most boxed foods, no commercial bread, no potatoes, or white flour, no sweeteners of any kind (no honey, maple syrup, molassas). Salt must be inspected because most have additives. Some cheeses and meats have additives. No ham, hot dogs, lunch meat, sausage, bacon, or processed cheese. Our diet is very simple. Meat and vegetable, homemade whole wheat bread (I make 2-3 loaves/week). We do have corn, but only fire roasted and only during the summer when it is fresh.

Cooking for my sweetie is quite simple and other than preparing fresh vegetables, there really isn't much time involved.

Monday we had: summer squash/onion/cheese on a biscuit crust... was really yummy and I had leftovers for today at lunch. Tasted like a little pizza. Usually I make this with tomato/onion/cheese, but this combination was exceptional.

Tuesday... oven roasted chicken and steamed vegetables.

Wednesday... stewed beans with carrot and onion and chicken broth from last night.

Thursday... roast pork on the grill with fire roasted corn/or if it's raining we'll have steamed summer squash.

Friday... sandwiches. We'll be going to Springfield directly after work that day, so no time to cook.

Saturday... Steak and baby bok choy on grill with olive oil and garlic... we love these little bok choy. Our pastor's wife had them for a dinner at church and we really like the stuff. Saturdays are special days because we have soooooo much to do. There is little time for leisure, so supper must be good and quick. Last Saturday my schedule included a trip to the library, went to the dump because Mr. Doug drove the truck, a little grocery shopping, doing laundry and hanging clothes on the line, cleaning our little camper (thankfully that doesn't take too long), preparing for Sunday School, making bread, and working in the garden while Doug was helping a friend. We didn't even get home and get cleaned up until 9 pm... that makes for a late supper and then there is church early on Sunday. There is little time to fuss about a big meal.

Sunday... we're having dinner at church. I'll probably bring some pork and beans and rolls/or biscuits. I may be able to bring a salad too, depends on what the Lord brings our way. We eat well and are very happy in our little camper!
